Jerk Tofu

Jerk seasoning is a delicious blend of Caribbean spices traditionally used for meat dishes. Its style is native to Jamaica in which meat is dry-rubbed or wet marinated with a very hot spice mixture called jerk spice or seasoning. Jerk seasoning principally relies upon two items: allspice (called “pimento” in Jamaica) and Scotch bonnet peppers (similar in heat to the Habanero pepper). Other ingredients include clovescinnamon, spring onionsnutmegthymegarlic, and salt.

It can be bought ready-made as either wet or dry seasoning or home-made as this one is. This home-made version is wet. You can choose the amount of hot peppers you want to use to impart its tropical intensity on your palate. If you are not used to spicy hot foods use scotch bonnet and other hot peppers with caution by starting with just a sliver and increase slowly to your preferred heat tolerance remembering that it’s just not jerk without the heat!

Ingredients:

  • 450 g / 1 lb tofu, frozen, thawed, slice or cube
  • 1/2 cup chopped spring onions

Jerk Seasoning (Wet) Mix:

  • 1/2  onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce /Braggs Liquid Aminos
  • 1/2 – 4 scotch bonnet
  • 2 tbsp apple cider vinegar
  • 1 tbsp sunflower oil
  • 1 tbsp fresh ginger, grated
  • 1 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 1/2 tsp thyme
  • 1/4 tsp nutmeg
  •  1/4 cup apple juice

Method:

Squeeze any excess water out of the tofu and arrange tofu cubes on one layer in a glass baking pan.

Combine all the Jerk Seasoning (Wet) Mix ingredients in a blender.

Pour the blended mixture over the tofu. Lightly press sauce into the tofu with a spatula or hands.

Let marinate for a few hours or overnight. Cover pan with a cloth until ready to cook.

Pre-heat oven to broil/grill. Broil/grill about 5-10 minutes, turn the tofu and broil/grill 5 to 10 more minutes until crispy

Serve hot with chopped spring onions for a garnish.
